Pasta alla gricia is a Roman delicacy made with pasta, guanciale (cured pork jowl), pecorino cheese, and black pepper. The Amatriciana, originally from the town of Amatrice in the Lazio region, is a tomato-based sauce with pecorino romano cheese and the unique guanciale di Amatrice. Cacio e pepe, which means "cheese and pepper," is a creamy sauce made with a generous amount of pecorino romano cheese, black pepper, and pasta cooking water. It is important to note that authentic Italian cacio e pepe must use pecorino cheese, not parmesan! Last but not least, Carbonara is one of the most beloved pasta dishes in Rome.
